Onions, you either love them or hate them. What better way to warm up on a cold day than with a soup? I checked my pantry and fridge to see what I had available — onions, onion soup mix, and beef. Just the ingredients I needed to make one of my favorite soup!

Onion Soup (Serves: 4 Ready: 30 minutes)
Ingredients:
2-3 small onions
2 onion soup mix
1-2 small steaks
4 slice of bread
Grated Cheese
First, cook your steaks in a pan and cut them into small pieces.

Chop your onions into small strips.

Follow onion soup mix directions on the package. Mine was two cup of water and 2 tbsp of flour for 1 pack of onion soup.

Put everything in a large saucepan and let it simmer for about 10 minutes.

Pour everything in four french onion soup bowls.

Toast your bread, cut it into pieces, and place it on top of the soup.

Cover with cheese and cook in the oven at 400f for 8 minutes and on broil for 2 minutes.


I didn’t play a game while doing this, instead I started watching Battlestar Galactica Season 1 (Thanks for recommending it G.K.)

I LOVE french onion soup. It’s one of the only kinds of soup that I like (the only other is clam chowder).

My girlfriend uses a simpler and a tastier version (meaning, no additives, ready made mixes etc. All measurements in metric, sorry, but use googles handy conversion if you’re used to us stuff)
What you need:
1 kg of onions
4 large cloves of garlic
3 dl of organic cider or white wine (cheap dry wine is perfect for cooking btw, no need for expensive stuff)
1 l of herb stock, preferrably not from a cube, but cubes are ok if you don’t have fresh stock
fresh white bread with crust
mozzarella, grated
thyme, salt and bay leaf to taste
Chop the onions, cush the garlic, braise in a pot with thyme and some olive oil for ca 15 minutes. Add the stock and cider or wine, add bay leave. Let it boil for 20 minutes and add salt to taste. If using regular white onions, ad a pinch of sugar.
After 20min, remove the bay leaves, and divide the soup evenly to ovenproof bowls. Add the bread, as cubes or as a whole slice, and the cheese, bake until the cheese has melted.
Believe me, this will blow you away with taste. Too bad her food blog is in Estonian, but I can link you the picture of the delishiousness - for pictures NEED NO LANGUAGE

Normally we don’t have it with meat, but that does look seriously delish.
Also try replacing a cup of the broth with a cup of dark beer (porter’s probably best). Smells to high heaven while you’re cooking, but it’s worth it in the end.

As a french guy I must say I’m a bit surprise.
We don’t put beef in onion soup here ( In Paris, or in Lyon where the recipe come from if my believe my granddad )

Wise choice in keeping busy while waiting for the soup to finish. I just bought Seasons 1 and 2 myself. I’ve been hooked on that show from day one.
As for the soup I, like you, have always preferred mine with beef instead of without, as some have said. Personal taste I guess.

yeah, well the beef comes from the way my parents used to do it.
We used to do meat fondue http://tinyurl.com/35jny4 , and when we were done, we’d take the soup and the rest of the meat, and pour it in the french onion soup bowls for the day after…
So I guess this is where I took the “meat in onion soup” thing

I never knew there was a name for that kind of bowl. Putting it in the oven with the cheese and bread is a great idea, I may have to try something like that with other soups.

I’d probably use mashed potatoes instead. Seeing how that’s what it looked like to me when I saw the picture.
I can’t stand cheese in certain things. It triggers my gag reflex.

Since when does French Onion Soup have BEEF in it? What you have just made is surely American Onion Soup. In fact, you should just call it Edgar Onion Soup and take credit where it is due, coz that soup looks pretty dammned fine. I personally would go with ham myself, or bacon. Mmmmm, bacon. Dammit, now I gotta go have some bacon!

the grocery store. I had some 3 peppercorn steaks in the freezer
the pepper gave the soup more taste

Hey Edgar - great recipe! I actually tried it out last night as I had suggested it to my girlfriend (who loves French Onion Soup).
We only had a pair of French Onion Bowls (actually went out to get a pair!) and had to microwave it to melt the cheese as the bowls we found were not oven safe (?!) but your recipe made an awesome dinner! Thank you!
